Our company (KAKUKYU) was founded in 1645 in the early Edo period, and is a manufacturer that continues to make "Hatcho Miso" using traditional manufacturing methods. This miso is made in a large cedar wooden barrel using the traditional method of producing a unique flavor due to the natural climate of the area. Inheriting the old-fashioned manufacturing method does not use extra energy in the aging process, and we are also conscious of environmental consideration by using wooden barrels.
